For shoulder mounts you start skinning from behind the shoulders. Then you skin from the elbows to the chest like the diagram shows. Skin all the way down to the neck and cut the head off. Leave the head in the cape if you can. For all pedistals start from mid body instead of behind the shoulder.
For all life size mounts I prefer you to skin up the back and up the back of the legs from the elbows down. I prefer the hunter brings the animals in for me to skin, but I know that can't always be the case.
